Food and beverage operations span six outlets ranging from casual to fine dining. Glitretind, the Forbes 4-Star experience within Stein Eriksen Lodge, features seasonal fare emphasizing sustainably sourced products. Troll Hallen, a more casual eatery, is adjacent to Glitretind and offers a more laid-back environment with hearty options great for fueling a day in the surrounding mountains. Champions Club is a place for families with elevated comfort foods and free video games for kids of all ages to enjoy. First Tracks Kaffe features a signature coffee blend, hand-crafted drinks, and an assortment of in-house pastries. Cena, located at The Chateaux, is an American-Italian outlet featuring homemade pasta, mozzarella, burrata, and seasonal homemade pizzettes. 7880 offers stunning views from Stein Eriksen Residences. The menu is eclectic and inventive, surprising and delighting guests with unique offerings.  
 

Guest Facing Positions:
Core front-of-house positions include baristas, bussers, servers, bar staff, and food runners. Experience required varies based on the outlet, though all demand execution of Forbes-rated service in a luxury hospitality environment. The team is led by Food & Beverage professionals with extensive experience and training in the fine dining space.  

The Stein Collection is known for its world-class event space and boasts Park City’s largest banquet facility located at The Chateaux. Banquet teams cater to corporate groups and wedding guests to provide exceptional events. 


Culinary Roles:  
At Stein Collection, leaders from across the globe bring knowledge and skills to the team. We are proud of the strong “promotion from within” culture and can boast several success stories with team members joining as dishwashers who now work as chefs. With many unique dining outlets and offerings, chefs can gather skills in many areas, including preparing for a wedding for 300 people, learning to make homemade pasta and burrata cheese, working action stations on a buffet line, and mastering Forbes standards for fine dining plating.  

We have a full pastry shop where we create dessert magic. With a chocolate room complete with a tempering machine and a large supply of the finest couverture chocolates, the talented pastry team invents stunningly tasty and beautiful bonbons and chocolate displays. The shop supports all outlets with plated dessert items, yeast dough production, and laminated dough creations.  

A hard-working stewarding team keeps each kitchen running. This team allows chefs to create amazing dishes synonymous with Stein Collection. This role is a perfect way to gain exposure to kitchen life and get practical experience assisting with food preparation.  


CIA Internships: 
At Stein Collection, we are proud to host three groups of culinary interns from the Culinary Institute of America (CIA) in Hyde Park. Students gain exposure to everything from banquets to fine dining plating. Vice President of Food & Beverage and Corporate Chef Zane Holmquist is a CIA graduate who relishes the opportunity to shape the educational path of these students.
