Meet Executive Chef Jim Hopkins

He fell in love with Park City and stuck around for ten years before becoming a professional outdoor guide in the red rocks of Moab, Utah, where he met his wife. He and his wife then lived in Italy, Washington D.C., and Manhattan while chef attended the French Culinary Institute.

Cooking was a part of all chefs' jobs growing up; it always came quickly to him. He grew up in a big family where his mom was cooking often. He recalls working at a pizza shop when he was 16; he had always been good at cooking.

Chef Hopkins and his family returned to Utah, where he began working at Stein Eriksen Lodge from 99-05 before leaving to work as a private chef, which allowed him a ton of flexibility while he had little kids. He later returned to Stein's in 2010 until leading the culinary team at the 7880 Club at Stein Eriksen Residences when it first opened.

Chef describes 7880 as New American, pulling inspiration from various cultures and ways of cooking. He always recommends the Ora Salmon Superfood Salad to guests; he loves how nutritious, delicious, and beautiful the dish is.

Chef Hopking spends his free time seeking adventure with his wife and two children, whether walking their three dogs, snowboarding, spending time in Moab, or riding his bike as much as possible, no matter the season. He collects bikes and currently has around 30. 

He is looking forward to retiring in a few years and continuing to live an adventurous life.

His favorite thing about working at Stein Collection is how the team members are cared for like family and how Corporate Chef Zane Holmquist does things right and gives his team the tools to succeed. These internal successes always translate to an exceptional guest experience.
